The side fan means you very rarely have to rotate trays and it cuts the drying time. The Excalibur is also much easier to clean than the round dehydrators. Its heat source and fan are in the back, and the fan forces air to distribute evenly throughout the chamber. Other than the way the foods are placed, there’s no reason for uneven drying spots.

The main concern for a few reviewers is that the Excalibur 3900 has no shut off timer which is very important. If it’s left blasting overnight, the foods get over-dried so a shut off timer is very important. The middle trays dry quicker than top and bottom trays and it’s quite difficult to clean. The trays have huge holes covered with a removable plastic mesh which must be hand-cleaned but they’re too big to fit in a sink.
